Creamy Roasted Red Pepper Tomato Pasta
Pasta is a good source of energy that contains a good amount of fibre. This recipe contains herbs such as garlic and rosemary. These herbs are filled with anti-inflammatory properties and inulin, a functional fibre that makes your gut function better overall.

Agastya whole wheat pasta Dried tomatoes in oil Onions Minced garlic Roasted red peppers Fresh chopped rosemary Chickpeas ricotta cheese Kosher salt Freshly ground pepper |
INSTRUCTION |
Cook Agastya pasta until al dente. Drain pasta, reserving about 1/2 cup of pasta water.While pasta is cooking, heat a small pan. Add sun-dried tomatoes with their oil to the pan and stir for about 2 minutes. Add the onions and sauté for 2 to 3 minutes until translucent. Add garlic and stir for 30 seconds until fragrant. Add roasted peppers and stir together for 2 minutes more. Add chopped rosemary (if using) and stir for another 30 seconds. Remove from heat. (Skip this step if pressed for time.)Transfer pepper tomato mixture to the bowl of a food processor, add chickpeas and ricotta cheese and puree until mostly smooth. (There may be a few chunks of pepper and tomato.) Drizzle a bit of olive oil in the bottom of the pasta pot and return drained pasta to the pot over a low flame; toss to coat with oil. Toss pasta with sauce, adding reserved pasta water if necessary to thin out the sauce. Serve hot. |

INSTRUCTIONS: |
For the Pasta: Cook the pasta according to package directions. Once cooked, drain and rinse under cool water. Drain thoroughly and spread out on a baking sheet to dry while you make the dressing. |
To Make the Dressing: In the bottom of a large mixing bowl, whisk together the mustard, vinegar, garlic and Italian seasoning. Once combined, whisk in the olive oil. |
For the Salad: Add the cooled, cooked pasta to the bowl with the dressing along with the artichoke hearts, spinach, bell pepper, carrots and parmesan cheese. Toss to combine. Season with kosher salt and black pepper to taste |
